Ham Smorgasbord Eugenio Ultimate

Sometimes you just don’t want to go out shopping for extra food ingredients, our Ham Smorgasbord Eugenio Ultimate, is just the thing to make. This fabulous, gourmet frugal, meal is both nutritious yet relatively inexpensive to make and you can whipped it up in short time. It may also become your favorite “comfort food”!


  • 1 large red pepper
  • 2 medium size onions
  • 1/2 pkg sliced mushrooms
  • 2 large yellow zucchinis
  • 2 sls Black Forest cooked ham (1/4 inch thick)
  • 1 broccoli
  • 1 can Fava beans
  • 1/2 can spiced stewed tomatoes
  • 1 large Italian tomato
  • 1/4 cup garlic butter
  • 1/4 cup canola oil
  • 1 tbsp beef stock powder
  • 1 cup water (warm)
  • 1 tbsp curry powder (mild)
  • marjoram powder (to taste)
  • turmeric powder (to taste)


Cut up onions, red pepper, zuchinni, broccoli, and tomato into large chunks. Slice the Black Forest cooked ham into 1/4 inch thick slices and then dice into chunks. Using a wok or large size frying pan, add the garlic butter and oil. Turn on high heat then add the onions, prepper, mushrooms, zucchinis and saute them until onions are transluscent. Add the Fava beans, spiced stewed tomatoes, and the italian tomato. In a separate small mixing bowl, prepare the beef stock by adding warm water to the powder and mixing well. Add this mixture to the rest in the frying pan and stir well. Turn down the heat to medium and cook a bit more then add the spice powders. Add the cooked ham pieces and stir into ingredients. Cook until vegetables are tender, turn off burner and set aside. Serve over cooked rice. Enjoy!
