Apple-Cinnamon-Raisin Muffins


Autumn time harvest provides wonderful produce to eat and to make yummy stuff like our apple-cinnamon-raisin muffins soon to be world famous,  judge for yourself… Mmmm!



  • 2 cups      whole wheat flour
  • 2 tsp         baking powder
  • 1               egg
  • 3/4 cup     buttermilk
  • 1/2 cup     milk
  • 1/4 cup     canola oil
  • 1/2 cup     sugar
  • 1/4 tsp      salt
  • 1               apple, large size
  •                  raisins
  •                  Cinnamon powder
  •                  sugar
  •                  margarine


Mix all dry ingredients together in appropriate mixing bowl. Prepare apple, core and slice into small pieces and place in appropriate seperate bowl. Add sugar and cinnamon as suitable, mix and coat apple bits by stiring with large wooden or plastic spoon and set aside and add raisins. In separate bowl beat your egg well and add the buttermilk, milk and canola oil. Transfer the liquid mixture to dry ingredients bowl and mix thoroughly. Prepare muffin tins by lubing individual muffin cavities with margarine. Place sufficient apple bits and raisins into individual muffin cavities. Transfer quantities of muffin batter to muffin tins filling the muffin cavities and stir mixture up with a small spoon. Heat up oven to 350 F and place prepared muffins mixture to bake, bake 25 to 30 minutes or until well browned.
