Chickpea Chicken Delight

During these often cold months of Spring, it nice to enjoy some warm , tasty, ‘comfort food’ such as our Chickpea Chicken Delight, which wonderfully
satisfies our hunger pangs meanwhile, warms our tummy with a warmth that seems envelope our whole being. Actually, I like it because it is simply a
yummy dish and hope you will too!

Ingredients

1 can Chick peas
1 can Cream of Mushroom
1 1/2 can Water
2 tbsp Corn Starch
2 tbsp Curry
Margoram
Chili powder
Garlic powder
Paprika powder
Pepper
Salt
2 Chicken breasts (deboned/skinned)
2 tbsp Olive Oil
1 Green Sweet Pepper (large)
2 Red Sweet Peppers (medium)
2 Onions (medium)
1 pkg Mushrooms
2 Zuchinnis (small)
3 tbsp Butter

Method

Prepare all vegetables, cutting into chunks. Open canned ingredients readying them for cooking. Turn on stove and in a large wok or frying pan, add
oil. Add all vegetables, chickpeas, and cook until onions are transluscent and other vegetables soft. Meanwhile, prepare chicken by cutting into small
chunks, spice with marjoram, garlic powder, paprika powder, add the butter and place in a suitable microwave dish. Add the cream of mushrooms and
water to vegetable and peas mix and continue to cook. Add the corn starch, curry, chili powder, pepper and salt to taste, and mix in. Microwave
chicken pieces 3 minutes or until cooked. Add the chicken into frying pan and cook until the mixture liquid is reduced and less liquid afterwards, turn off
burner, remove from stove and serve.
