Apple-Blueberry Delight Cake


Easter Sunday was the perfect time for our Apple-Blueberry Delight Cake it did have much competition amongst the myriad of delectable goodies presented on the huge table for our now much expanding family clan however, it didn’t disappoint us proving once again, that one piece was never enough mmm..mmm delicious!


1 cup canola oil
1/4 cup brown sugar
3/4 cup sugar
1/2 cup maple syrup
3 large eggs
21/2 cups sifted all-purpose flour
3 tsps baking powder
1/2 tsp salt
1 tsp cinnamon
3 medium apples sliced thin
1/2 cup blueberries
* Icing sugar (optional)


Set oven to 325 F to preheat. Prepare required cake pan or springform cake pan by greasing sides and powder with flour lightly, set aside. In a big bowl, add oil, sugars, maple syrup, and eggs , and beat well. In a separate bowl prepare dry ingredients and blend together. Add the contents of second bowl to first and beat to blend well. Pour and rubber spoon batter into cake pan and prepare for insertion of the apples and blueberries. Fold in/insert the apples and blueberries as suitable. Place cake into oven and bake for about 1 1/2 hours or until when a toothpick or probe comes out clean when inserted into the cake. Remove from oven, carefully remove from pan, and place on rack to cool. Powder with icing sugar or leave as is. Serve after it cools.
