Eggplant has been made marvelous by people in many wonderful and different ways and all are delicious however, I think my version is unique and now I would like to share it with you. By-the-way, pictured is what my marvelous eggplant dinner looks like. Enjoy!
1 large onion
1 can (680 ml) tomato sauce Primo brand (Romano and basilic)
olive oil (or vegetable oil)
1 large green sweet bell pepper
1 medium red sweet bell pepper
1 cup mushrooms
mozzarella cheese (grated) *
cheddar cheese (grated)*
romano cheese (optional)
parmesan cheese (optional)
½ tsp. salt
½ tsp oregano
½ tsp. basil
½ tsp. marjoram
pepper ( to taste)
Slice up the onion into thin rings and the bell peppers into ½” wide strips and set aside. Also slice up mushrooms and set aside. Prepare eggplant by cutting off and discarding the top, then slice into ½” thick long strips along the length of the eggplant.
Lubricate the inside bottom of a 9” x 14” cake baking pan with oil. Cover the whole surface with onion slices. Add the sliced eggplant on top of the onion slices, then the peppers and tomato sauce. Sprinkle with the spices. Grate and spread the cheeses over the top covering the entire surface. How much cheese you put on is according to your taste.
Place in preheated oven, cook at 350°F for about 1 hour then remove from oven, and set aside and let cool for a while. Can be eaten as is or mixed with cooked rice, couscous, sweet potato etc.
* Ready grated vacuum-bagged cheese mixes for pizzas can be used, are great, and save you time and money.
